  2. Add the oil to the pan at the same time as turning the heat on. To test the pan is hot enough, add a drop of water using a teaspoon or your finger. The water should form a bubble and skitter across the pan. You can now add the meat to the pan.

  3. Regular (e.g. Stainless Steel) Pan
  4. With regular pans, wait until the pan is hot before adding the oil. To test the pan is hot enough, add a drop of water using a teaspoon or your finger. The water should form a bubble and skitter across the pan. Making sure the pan is dry, add the oil, quickly followed by the meat.
